This is definitely worth a little bit more research, but scholars have identified a number of things in the Bible that are believed to be direct quotations from Jesus. For personal research I’d look into the Q source and maybe something comparing the synoptic gospels. Scholars do believe there may have been at least one person who was following Jesus who wrote things down, and those documents may have been used to write the gospels after the fact
